Using UIKit in XCode to capture a touch/swipe event, I am finding the number of points captured along the swipe is not many. ie. ends up looking like a chunky polygon rather than smooth curve when I plot it.Will cocos allow me a better sample rate?
Just sample touches move events between touches begin and touches end... should work whether you use Cocos or UIKit... If you are going to use Cocos2d, the X variety is the one that is still supported...
It'll be the same. Cocos2d just uses UIKit touch detection methods under the hood.

@edz - is there a library I can use somewhere/somehow that will give me a more frequent rate?
